* Distillery Exclusive * This is our first Distillery Exclusive release, only available from the on-site distillery shop (with a small number allocated to our Founders’ Club members). Each bottle has been hand-filled, individually numbered and finished with a handwritten label.
For this expression we selected a small, first-fill rye whiskey cask for the first 3 years and 5 months of maturation, before transferring to a small, refill ruby port cask for the remainder of the maturation period. The entire cask has been disgorged and bottled at cask strength, without chill-filtration or colouring.
Distiller’s Comments: “This dram delivers a generous helping of rich, jammy fruit, with deeper notes of coffee and dark chocolate lending balance and complexity. The double maturation—first in a rye whiskey cask, then into a ruby port cask—has mellowed the spice while layering in vibrant notes of cherry and raspberry. A dash of water reveals a softer, sweeter side, coaxing out hints of butterscotch and praline that make each sip all the more moreish.” - Abbie Jaume, Head Distiller
Tasting Notes
Nose: raspberry jam, peach cobbler, allspice and coffee.
Taste: dried cherries, cask char and praline.
Finish: medium-long, with rye spice, dark chocolate and raspberries.
Whisky: Floor-malted heritage grains are hand-mashed, long fermented, copper pot distilled, matured and bottled in our distillery.
