RELEASE NOTE

Welcome to the Cask Series of whiskies; a collection of unique expressions, each celebrating the marriage of our distinctive spirit with specially selected, individual casks.

For this expression, we selected four small red wine casks: three were fresh, wet casks direct from Château Batailley in Bordeaux, and one was a refilled merlot wine cask, that last held Cooper King whisky. After maturing for over 4 years, the casks were married together and bottled at cask strength, without chill-filtration or colouring. Each bottle has been hand-filled and individually numbered.

Positive Impact. 1% from the sale of every bottle is donated to our charity partner, Yorkshire Dales Millennium Trust, to fund life-changing apprenticeships for young people in rural areas, to help protect vital UK habitats (YDMT Registered Charity No. 1061687).

DISTILLER’S COMMENTS

“This is a whisky to settle in and spend an evening with. It develops wonderfully in your glass over time, rewarding your patience with elegant layers of orchard fruit, baking spices and toasted oak. Wine casks have a special place in our heart: they take us back to our time enjoying complex wine-cask influenced Tassie whiskies, and to our time in Bordeaux sourcing casks for this release. TASTING NOTES

  • Nose: spiced poached pear, cut flowers, raspberry coulis and white chocolate.

  • Taste: dried fruit, bay leaf, baking spices and citrus zest.

  • Finish: caramel, rich malt and Battenberg cake.

  • Maturation location: Cooper King Distillery

  • Grain: 100% floor-malted English Maris Otter barley

  • Yeast: distiller’s yeast

  • Fermentation time: 6 to 7 days (144-168 hours)

  • Distillation: double distilled on a 900-litre copper pot still (‘Neilson’), upgraded with internal electric heating elements and coated with a ceramic bead insulative layer.
