DISTILLER’S COMMENTS
“This whisky charted its own course. Originally destined to be shared with you last Christmas, the small, fresh port casks I selected for finishing refused to be rushed; the whisky simply wasn’t ready to leave. Patience, and a further four months of maturation, gave it the breathing space to soften and unfold, revealing layers of dark sugar, dried fruit and lingering coffee. TASTING NOTES
Nose: maple syrup, rum & raisin ice cream and sticky prunes.
Taste: muscovado, marmalade, liquorice root and affogato.
Finish: luxurious coffee crema, chocolate cherries and tobacco.
SUGGESTED SERVE
Short: neat, or with a dash of water. Pairs well with dark chocolate, panforte or blue cheese.
Long: enjoy in a Whisky Highball. In a glass filled with ice, mix one part whisky to three parts soda water, Indian tonic water or ginger ale. Garnish with an orange slice.

Cask profile: 59% ex-tawny port finish / 23% ex-ruby port / 11% ex-cognac / 7% other
Cask finish: ex-tawny port casks were used to finish a marriage of casks, consisting predominantly of ex-red wine NEOC, for 5.5 months.
Wood profile: 63% American oak / 34% French oak / 3% European oak

Casks filled: March 2020 to December 2022
Maturation time: 3 years, 2 months (youngest whisky) to 5 years, 8 months (oldest whisky)
Maturation location: Cooper King Distillery
Grain: 100% floor-malted English Maris Otter barley
Yeast: distiller’s yeast
Fermentation time: 6 to 7 days (144-168 hours)
Distillation: double distilled on a single 900-litre copper pot still (“Neilson”). A proportion of the spirit was distilled while the still was fitted with external electric heating elements. The remainder was distilled following an upgrade to internal electric heating elements and the application of a ceramic bead insulative coating.
