RELEASE NOTE

This malt spirit is the starting point for all Cooper King whisky. Made from 100% floor-malted Maris Otter barley, it’s double-distilled in our unique 900-litre Tasmanian copper pot still, before being broken down with water and bottled. It’s an un-aged spirit: it undergoes no maturation process. It’s released in small batches throughout the year and bottled under the Pilot Series label: a range of small-batch, experimental releases. Positive Impact. 1% of each sale is donated to our charity partner, Yorkshire Dales Millennium Trust, to fund environmental conservation in England.

DISTILLER’S COMMENTS

“I love new-make spirit - it’s a window into a distillery’s whisky making process; the very DNA of what will one day become a mature whisky. Here, our choice of heritage barley, combined with floor-malting, long fermentation and slow distillation brings out the absolute best from the grain. TASTING NOTES

Released in small batches throughout the year, with slight seasonal variations. Typical details as follows:

  • Nose: mango, apple, sweet barley and sourdough bread.

  • Taste: toffee pennies, toasted nuts, malt and more tropical fruit.

  • Finish: long and rich with a satisfying, oily mouthfeel.

SUGGESTED SERVE

  • Short: neat, or with a dash of water.
