Straight Up

Complex, malty and unctuous

  • 25ml Cooper King New-Make

  • Dash of water

We recommend trying this spirit neat before moving on to explore other serves. It’s a wonderfully complex spirit with fresh tropical fruits on the nose at first, giving way to salted caramel to create a perfect balance of sweet and salty. On the palate there’s more fruit combined with rich malted barley, creamy hazelnut and notes of heather, underpinned by a satisfying, oily mouthfeel. The finish is long with soft, sweet malt and spice.

The addition of a dash of water opens up more floral notes and heightens its malty characteristics.

Maximilian Martini

Malty, saline and savoury

  • 50ml Cooper King New-Make

  • 12.5ml Lustau Vermut Blanco White Vermouth

  • 2 drops Bitter Truth Celery Bitters

Pour all ingredients into a mixing glass with plenty of ice. Stir until well combined and double strain into a chilled martini glass.

Note: Using the correct vermouth and bitters is critical to achieving balance with this drink. Ask at your local speciality bottle shop or purchase online at www.masterofmalt.com.

Off-Kilter

Fresh, piquant and rejuvenating

  • 6 lime wedges

  • 50ml Cooper King New-Make

  • 12.5ml sugar syrup

  • Soda water, to top (optional)

Muddle the lime wedges with the new-make and sugar syrup in a cocktail shaker. Add plenty of ice and shake vigorously until chilled. Double strain into a rocks glass and top up with crushed ice. Garnish with lime wedges taken from the shaker. Top with soda if a longer drink is preferred.

Note: If you don’t have access to an ice crusher, you can make your own rudimentary crushed ice by wrapping ice cubes in a tea towel and hitting with a rolling pin (or purchase a Lewis bag and mallet).

Golden Beautiful

Tropical, sweet and playful

  • 50ml Cooper King New-Make

  • 20ml Campari

  • 20ml passion fruit syrup

  • 15ml fresh lime juice

  • 15ml vanilla syrup

  • Soda water, to top

  • Lime peel, to garnish

Add all the ingredients except the soda water and lime peel to a cocktail shaker, add plenty of ice and shake vigorously until chilled. Strain into a rocks glass over one large ice cube and top with soda water. Garnish with the lime peel.

New-Make Mojito

Bitter-sweet, zesty and thirst-quenching. Created by whisky aficionado Dave Worthington (AKA Boutiquey Dave).

  • 4 lime wedges

  • 12 fresh mint leaves

  • 12.5ml sugar syrup

  • 50ml Cooper King New-Make

  • Soda water, to top

  • 1 fresh mint sprig, to garnish

Squeeze the lime wedges into a highball glass, then add the lime itself along with the mint leaves and sugar syrup. Gently muddle, add the new-make and fill with crushed ice. Stir to mix, top with more crushed ice and soda water. Garnish with the fresh mint sprig.
