Pilot Series Cocktails

 

A selection of new cocktails for you to delve into, developed with the Cooper King Pilot Series, a range of small-batch, experimental releases. With the rich maltiness of new-make spirit, the contrasting raspberry and warming spices in the gin liqueur, through to the refreshing crispness of the black cardamom botanical vodka, there’s plenty of scope for exploration. Chill the glasses, crack out the cocktail shaker and get creative.

Maximilian Martini

A unique new-make cocktail with a delicious savoury maltiness.

  • 50ml Cooper King Pilot Series No1 - New-Make

  • 12.5ml Lustau Vermut Blanco

  • 2 drops Bitter Truth Celery Bitters

Pour all ingredients into a mixing glass with plenty of ice. Stir until well combined and strain into a chilled martini glass.


Berry & Basil Crumble

The Yorkshire raspberries in the gin liqueur work beautifully with toasted hazelnuts and orange zest.

  • 50ml Cooper King Pilot Series No2 – Berry + Basil

  • 1 medium egg white

  • 1 heaped teaspoon plum jam

  • 3 drops orange blossom water

  • 5ml balsamic vinegar

  • 1/2 tsp crushed hazelnuts, to garnish

  • Orange peel, to garnish

Reserve the hazelnuts and orange peel for garnish. Add the remaining ingredients to a cocktail shaker, dry shake (without ice) first, then add plenty of ice and shake vigorously until chilled. Double strain into a chilled martini glass. Garnish with crushed hazelnuts, then lightly toast with a small kitchen blow torch. Twist the orange peel over the drink to release the oils, then discard.

Note: Dry shaking whips air into the cocktail to give the finished drink a silky mousse-like texture.

Black Cardamom Aperitif

A crisp and refreshing cocktail, perfect for an aperitif.

  • 3 lime wedges

  • 50ml Cooper King Pilot Series No2 – Black Cardamom

  • Pinch of black pepper

  • 2 pinches of salt

Muddle the lime wedges in a cocktail shaker until well juiced. Add the rest of the ingredients, plenty of ice and shake vigorously until chilled. Double strain into a chilled rocks glass.

Note: If you prefer you can salt the rim of the glass instead of adding to the shaker. Before making the cocktail, lay a shallow layer of salt onto a plate. Take a piece of lime and run it around the rim of an empty glass, then place the wet rim onto the salt layer on the plate. Shake off excess salt, then proceed to make and serve the cocktail.
